During the early stages of Ross' quest (S3) letters kept appearing everywhere throughout the dungeon. What's going on? Competition?

Yep, they did this several times I think. The viewers had to find all the letters and spell out a magical word with them. The word was "EXCALIBUR" if I remember rightly.
